Cheese Straws Makes about 60 225g / 8oz plain flour, plus more for dusting 225g / 8oz unsalted butter, plus more for greasing 170g / 6oz strong farmhouse Cheddar and/or Parmesan cheese 2 tsp cayenne pepper 1/2 tsp salt Rub the flour, butter, cheese, cayenne pepper and salt together. Add 1 tablespoon of water and bind. Cling-wrap and refrigerate for one hour. Preheat the oven to 180\xbaC / 350\xbaF / gas 4 and grease two baking trays with a little butter. Roll out the mixture on a lightly-floured surface to a thickness of about 5mm / 1/4 inch. Cut or score into strips. Sprinkle with a little grated cheese, put on the trays and bake for about ten minutes.
